  • Death in the Afternoon: Invented and named by Papa Hemingway himself; a superb mix of absinthe and champagne. Because, right?

About Spillian: A Place to Revel

The word Spillian is Old English for “to play, to jest or to revel.”

Spillian is the love child of a theatrical designer and a cultural mythologist. Housed in a unique bit of Catskills history, an 1886 mansion built by the Fleischmann’s Yeast family as a summer estate, now listed on the National Register of Historic Places, Spillian revels in imagination, story, and how we make meaning in our lives. We host weddings, workshops, and unexpected celebrations. An enchanted setting. Superbly inventive food. And an endless delight in the intersections between whimsy and ritual. Imagine past what you think is possible.

Experience Valentines Day in a different way this year. At the Bear Café, we offer you the best of Fine Dining in the Catskills. A meal at ‘The Bear’ is a sumptuous experience, distinguished by its elegant service, the highest quality of our ingredients, and the distinctive ambience of our carefully designed Creekside restaurant with its soft pink seating, bluestone bar, and tables hewn from local black walnut trees.

For the entire weekend in the days leading up to Valentine’s Day, we will be celebrating this most esteemed of occasions with foods carefully chosen to satisfy every appetite. We will tempt your taste buds with distinctive foods and handmade, carefully chosen and crafted beverages.

From Friday February 10th through Sunday 12th, we feature sparkling new cocktails and sumptuous ingredients such as oysters, chateaubriand steaks, and a special smokily- sauced grilled eggplant.

Christopher J Hack, the Bear’s own Mixologist, is a fan of all fine wines, including champagnes. He has crafted a tantalizingly intriguing new cocktail for all lovers of the annual Valentine’s celebration.

In his turn, chef Josh Rajala has re-created two infamous and popular dishes.

His plant-forward Grilled Japanese Eggplant with smoked pomodoro sauce, squash noodles, braised fennel, and basil is so beloved by our loyal clients that we received protests when we ‘retired’ it for a while to allow new dishes to appear on the menu. Josh has now relaunched it with a subtle new twist, making it yet more memorable and delicious.

And for meat lovers, the Chateaubriand front cut fillet of tenderloin is large enough to share. Originating in the Loire Valley of France, in the small farming town of Chateaubriandt, the front-cut of tenderloin made its way to the Parisien kitchen of the French chef August Escoffier, who named the cut Chateaubriand, and prepared it with mushrooms, and a sauce reduction of white wine with shallots, a demi glaze, butter, tarragon and lemon juice. Chef Josh will be following in Escoffier’s footsteps creating an unforgettable meal for two.

And to top and tail your meal – maybe fresh Atlantic coast oysters to start? To finish - an Espresso Martini carefully crafted with just the right amount of crema foam? Or what about Tiramisu? This Italian classic is a dreamily soft coffee-flavored dessert that is light and airy, blending light sweetness, with the bitterness of a blend of coffee and cocoa. Intense and elegant, the unique combination of highest quality ingredients creates a decadent dessert that nonetheless acts as a stimulant at the end of your meal.

Come and celebrate the many beautiful facets of Love at The Bear Café – a perfect place to enjoy good food.

The event happens annually just before V-Day, allowing people to choose if they’d like to name one of the zoo’s many cockroaches after a loved one or a slimy ex.

A beloved tradition since 2011 at the Bronx Zoo, the Name-a-Roach program has been incredibly popular over the years. With a $15 donation you’ll be able to name a Madagascar hissing cockroach after a loved one, or, as in many years past, a pesky ex.

This Valentine’s Day, go out and toast each other and love… It's a many-splendored thing! Happy Valentine’s Day, Lovers!
